Italian Fettucini Calamari

Calamari is what the European call for squids, and deep fried squids are very popular in Europe. Combine it with fettucini and you’ll have a high-class European cuisine, perfect for dining at home. Here’s a fettucini calamari recipe you can try..

Serving for 2

Ingridients:

  • 200 grams of Fettucini (7 ounces)
  • 100 grams of smoked beef (3.5 ounces), cut it long
  • 50 grams of onion (1.8 ounces), cut it long
  • 150 ml of soft cream
  • 75 ml of chicken stock
  • enough water
  • 25 grams of parsley (0.8 ounces), mince until soft
  • 2 tablespoon of margarine
  • 1/4 teaspoon of pepper
  • some salt

Calamari:

  • 100 grams of peeled squid (3.5 ounces), medium size, cut to ring shape
  • 50 ml of white wine
  • 100 grams (3.5 ounces) of bread flour
  • 100 grams (3.5 ounces) of medium protein flour
  • 2 eggs, whisked
  • 1/4 teaspoon of pepper
  • some salt

Directions:

  1. Boil the fettucini until it’s soft, take it, and set aside
  2. Mix the squid, white wine, salt, pepper. Mix it until they’re all mixed and leave it for 15 minutes
  3. Coat the squid with the flour, dip it to the mixed eggs and roll it in the bread flour. Repeat the process to all the squid slice. Pre-heat the cooking oil, fry all the squid, take it, and set aside.
  4. Pre-heat the margarine or butter,  fry the onion until it smells good. Add in the smoked beef, stir it and cook until the beef turn color. Add in the soft cream, stock, salt and pepper. Boil them. Add in the fettucini, stir it evenly until the cream and stock is absorbed by the fettucini. Add the parsley, stir it evenly, and take it.
  5. Serve.
