Rawon or sometimes called Black Soup is a favourite dish in Java, it’s most common in parts of East Java. The dish is literally black in color because of the ingriedients the soup named Keluwak. Here’s a recipe you could try

Serving for 4

Ingridients:

  • 500 grams (17.7 ounces) of beef fillet
  • 1,000 cc of water for boiling
  • 3 tablespoon of cooking oil
  • 2 cm (about half an inch) of galangal
  • 1 lemongrass, smash it
  • 2 bay leaves
  • 3 kaffir lime leaves
  • 2 tablespoon of sweet soy sauce
  • some sugar and salt

Condiments

  • 3 pieces of keluwak
  • 5 pieces of french shallot
  • 3 pieces of garlic
  • 2 teaspoon of fried coriander
  • 1 cm (less than half of an inch) of turmeric

Directions:

  1. Grind the condiments ingridients until soft
  2. Fry the condiments together with galangal, bay leaves, kaffir lime leaves, and lemongrass until it smells nice
  3. Add in the beef. Stir until the beef turn color. Add the sweet soy sauce, salt, sugar and water.
  4. Boil it with a small fire until the beef are soft.
  5. Serve
