Rotiboy is a franchise of brown buns that originated in Malaysia. They have open up a lot of stores in most of Asian countries. They’re delicious especially when served while having coffee or tea. This recipe might not be as good as the original Rotiboy, but it will be a good start of making one at home.

Rotiboy Bun

Ingridients:

  • 1 Kg (2.2 lbs) of flour.
  • 1 small wrap of instant yeast
  • 10 grams (3.5 ounces) of milk powder
  • 200 grams (7 ounces) of sugar
  • 1 teaspoon of bread improver
  • 1 teaspoon of salt
  • 2 eggs
  • 500 cc of ice water
  • 120 grams (4.2 ounces) of butter

Fillings:

  • 320 grams (11.28 ounces) of salted butter, cut it in 10 pieces, freeze it.

Topping:

  • 150 grams (5.3 ounces) of unsalted butter
  • 200 grams (7 ounces) of sugar
  • 4 tablespoon of coffee powder, dissolved it in 8 tablespoon of hot water
  • 2 eggs
  • 150 grams (5.3 ounces) of low protein butter
  • 40 grams (1.4 ounces) of milk powder
  • 1 teaspoon of coffee essence

Directions:

  1. Mix all the dry ingridients, add in the eggs and pour them with water. Mix them well, add the butter, mix again until they grow. Then seal the dough with plastic wrap, leave it for 30 minutes.
  2. Let the air go out from the dough and split them to 60 grams (2.11 ounces) smaller doughs, leave it for 10 minutes.
  3. Thin the dough, fill it with butter pieces, and then round them back. Leave it for about 45 minutes. Then put the dough on a butter-coated pan, give enough space for each.
  4. Now create the topping by mixing the butter, sugar, and coffee powder altogether. Then pour in some eggs, and mix well. Pour in flour and milk powder bit by bit while stirring. Add the coffee essence and mix it well. Put it at a cone.
  5. Spray the topping on top each of the dough circle it around the top.
  6. Bake the dough in an oven at 180 degrees Celcius (356 degrees Fahrenheit) until they’re done.
  7. Serve while hot.
