Tortilla Chips Recipe and Tips

There are two types of tortilla, one is tortilla made from flour that’s ussually used for taco or kebab and the other is made from corn meal. This time I would like to give you a crunchy tortilla chips recipe made from corn meal, it would be the best snack for you and your family when they’re watching movies or sports at home.

Tortilla Chips

Ingredients:

  • 1 kg of corn (35.3 ounces)
  • 25 grams of lime paste (1.2 ounces)
  • 5 grams of cooking oil (0.2 ounces)
  • 50 grams of salt (2 ounces)
  • 30 grams of garlic (1 ounce)
  • 3 grams of pepper (0.1 ounces)
  • 5 grams of Sodium Cyclamate (sintetic sweetener, 0.2 ounces)
  • 30 grams of cooking broth (1 ounce)
  • Improver 6 grams (Sodium Polyphosphate, 0.2 ounces)
  • 4 grams of baking soda (0.14 ounces)
  • Sodium Persulphate or anti-oxidan 0.5 grams (0.02 ounces)
  • 5 Litres of water (305 Cu.Inches)

Directions:

  1. Mix the lime paste with the water, stir until dissolve
  2. Add the salt and cooking oil, stir
  3. Put the corn and boil for 2-2.5 hours (don’t let the corn became to moishy). Set aside
  4. Soak the boiled corn for 24 hours, and stir it ocassionally
  5. Drain the water used for soaking the corn, set the corn aside.
  6. Add the garlic and pepper. smooth it with a blender. set aside
  7. pound the corn until it become a thin slice and cut it as you like
  8. dry it until it’s very dry
  9. Fry with hot oil (170 C or 338 F) for 15 seconds. Set aside
  10. Ready to serve

Tips:

  • Use the finest corn for making the tortilla
  • Adding the sodium cyclamate will add a sweet taste to the tortilla, avoid using sugar as sweetener as it will make the tortilla dark/burnt when fried.
  • The Anti-oxidan will make the tortilla’s color browny and not easy to spoil
  • The added improver will make the tortilla crunchy when fried
  • The lime paste and baking soda will also make the torilla crunchier
